dating life updates: talking matchmakers, dealbreakers and where to meet partners (spoiler alert: I do not know) also here’s what I made: Lemony Quinoa & Rice Salad with Asparagus, Peas & Basil Ingredients 1 cup cooked quinoa & rice blend (microwaved or prepared on the stove) 1 1⁄2 cups water (if cooking from scratch) 1 bunch asparagus, chopped into pieces, woody ends removed 2 cups peas 1⁄2 cup fresh dill, chopped 1⁄2 cup parsley, chopped 1⁄2 cup fresh basil, chopped 1⁄4 cup toasted almonds (or pistachios), roughly chopped 1⁄2 cup thinly sliced sugar snap peas or shaved fennel 1 lemon, zested and juiced 1⁄3 cup olive oil Salt and pepper to taste 1⁄4 teaspoon Aleppo pepper or chili flakes (optional) 1⁄4 cup shaved Parmesan Instructions If using uncooked quinoa and rice, rinse well and cook according to package directions. Fluff and set aside. Boil asparagus and peas for 2-3 minutes until just tender. Drain and immediately blanch in ice water to keep them vibrant. In a large bowl, combine the cooked quinoa-rice mix, blanched veggies, fresh herbs, sugar snap peas or fennel, and toasted nuts. In a small bowl, whisk together olive oil, lemon juice, lemon zest, salt, pepper, and optional Aleppo pepper. Drizzle the dressing over the salad and toss to combine.
