You literally are what you eat - and you can be POWERFUL with this saucy salmon metabolic power bowl recipe I created for @Levels Kitchen! 🥣
Ingredients:
5-6 cloves of garlic
1 tbsp pecans, chopped
1 bell pepper, thinly sliced
2 cups cherry tomatoes, diced
2 cups brussels sprouts, quartered
1 head red cabbage, chopped
1 bunch of green onions, chopped
1 yellow or red onion, chopped
1 avocado, sliced or cubed
1 head of cauliflower (plus broccoli stems, optional)
1 tbsp olive oil
Salt and pepper
1 tsp turmeric
1⁄4 cup lupini beans
Wild-caught fresh salmon
1⁄2 tsp lime juice
Basil seeds or chia seeds
Sauerkraut
Sauce (from I am Grateful: Recipes and Lifestyle of Cafe Gratitude by Terces Engelhart):
1 cup unsweetened coconut milk
1 tsp minced jalapeno
1-3 tbsp minced ginger
3 cloves minced garlic
2 tbsp lime juice
1⁄8 tsp cayenne
2 tbsp tamari
1⁄2 cup raw almond butter or peanut butter
1 tbsp red miso
Optional: 1 chopped date
Method:
Preheat oven to 400°F. Chop garlic (or mince using a small food processor).
Add Brussels sprouts to a pan. Toss with olive oil, salt, and pepper. Roast in the oven for 10-15 minutes until soft.
Lightly coat salmon with olive oil, salt, pepper, & a splash of lime juice. Place in the oven for about 12-15 minutes.
Chop cauliflower head into 2-3 inch pieces & add to food processor. Pulse until the cauliflower looks like rice. Set aside. If you have extra broccoli stems on hand, chop into 2-3 inch pieces & add them to the food processor as well for some broccoli rice.
Add 1 tbsp olive oil to the pan. Saute the onions and garlic for 2-3 minutes. Add the cauliflower and/or broccoli rice to the pan & stir for 1-2 minutes. Add turmeric & a pinch of salt to the rice. Stir for 3-4 more minutes. Do not overcook.
For the sauce, add all sauce ingredients to a blender & blend for 10-15 seconds, or until smooth.
Assemble by placing the base in a large bowl. Add your salmon (or other protein). Add cooked brussels sprouts, beans, veggies. Top with sauerkraut, basil seeds, pecans, and your sauce.
