Meet Fares! Our Garde Manger chef who is also a graduate of Food and Finance High School where he received culinary training thanks to @foodeducationfund. This month, Chef Lena and Fares collaborated on a signature dish - Shrimp Croquettes! - currently featured on our bar snacks menu. ⁣ Proceeds of this dish will benefit Food Education Fund and support their mission to empower students to pursue careers through experiential learning in culinary arts, hospitality, and entrepreneurship. ⁣ When dreaming up a dish to create for our Summer Series, Fares knew he wanted to make something with seafood and recalled the first dish he ever worked on from start to finish as an intern at Union Square Cafe: our fish croquettes! ⁣ Updated with a seasonal spin, Fares' version features sweet corn and peppers lightly fried and served with fresh lemon and shrimp aioli. This summer, we have two Food Education Fund interns who will be preparing this dish, just as Fares once did. ⁣ Stop by to try Fares' dish and join us in our support of @foodeducationfund
