To celebrate World Vegetarian Day, we’ve dropped a brand new Hidden Veggie Pasta in the KIC app featuring our red lentil pasta available at @colessupermarkets! SAVE THIS RECIPE: 3x garlic cloves 1x onion 1x carrot 1x red capsicum 1x zucchini 
1x spray extra virgin olive oil 1tbsp tomato paste 400g tinned tomatoes 125ml vegetable stock 15g fresh basil leaves 3/4 tsp salt 1/4 tsp ground pepper 350g Keep It Cleaner Lentil Pasta (@colessupermarkets)
 Method: 1. Mince garlic and finely dice onion, carrot, capsicum and zucchini. Heat oil in a pan over medium heat. Once hot, add the chopped veggies and sauté for 6-8 minutes, or until softened and fragrant. Add the tomato paste and cook for 2 minutes, or until the paste has darkened slightly. Next, add tinned tomatoes, stock, basil, salt and pepper. Bring to a boil then let simmer for 10-15 minutes. 2. Meanwhile, bring a pot of salted water to boil and cook pasta until al dente, then drain and return to the pot. 3. Transfer sauce to a blender and bend until smooth and creamy, then pour over the cooked pasta and stir until well-coated. Feel free to add a dash of pasta water if the sauce is too thick.
