Ingredients For the chicken & mirepoix: 1.5 lbs boneless, skinless chicken breast or thighs, cut into bite-sized chunks 1 1⁄2 tsp Kinders Roasted Chicken seasoning 2 tbsp Graza sizzle 2 tbsp unsalted butter 1 cup onion, diced 1 cup carrot, diced 1 cup celery, diced 1 1⁄2 tsp Kinders Cowboy Butter seasoning For the sauce: 3 tbsp unsalted butter 3 tbsp all-purpose flour 3 cups kettle&fire chicken stock (preferably low sodium) 1⁄2 cup heavy cream 1⁄2 tsp salt (adjust to taste) 1⁄2 tsp black pepper 1⁄2 tsp dried thyme (or fresh sprigs for garnish) For the crust: 2 rounds homemade pie dough (top & bottom crusts) 1 egg, beaten (for egg wash) Instructions Cook the chicken – Heat your @Skottsberg Cookware cast iron braiser over medium-high heat. Add @Graza and 2 tbsp butter. Season chicken with @Kinder's Flavors Roasted Chicken seasoning. Sear until golden brown on the outside (about 4–5 min), then transfer to a plate (it will finish cooking later). Make the mirepoix – In the same pan, add diced onion, carrot, and celery. Season with Kinders Cowboy Butter seasoning. Cook until softened, about 5–6 min. Make the sauce – Add 3 tbsp butter to the veggies, melt, then stir in flour to make a roux. Cook for 1–2 minutes, stirring constantly. Gradually whisk in @Kettle & Fire Shop chicken stock until smooth, then stir in heavy cream. Simmer until thickened, 4–5 min. Combine – Return chicken (and any juices) to the pan. Stir well and simmer for another 5 min until chicken is fully cooked and flavors meld. Adjust seasoning with salt, pepper, and thyme. Assemble the pie – Preheat oven to 425°F (220°C). Roll out one pie dough round and line the bottom of a @Pyrex glass pie dish. Spoon in the hot filling. Place the second dough round on top, sealing the edges. Cut a few slits in the top crust for steam to escape. Brush with egg wash. Bake – Place the pie dish on a baking sheet and bake 35–40 min, until the crust is deep golden and the filling is bubbling through the slits. Let cool 10 min before slicing.
