Harissa butter beans on toast time: 15 minutes serves: 1 ingredients: -2 slices good-quality sourdough bread -2 cloves garlic, peeled & chopped -2 teaspoons of harissa paste -1 x 400g tin butter beans, drained -2 tablespoons of coconut yoghurt or any plant-based yoghurt -1 lime, juiced -pinch of sea salt -drizzle olive oil method: 1.Place a pan over a medium heat and add a drizzle of olive oil. 2.Once warm, add the garlic and a pinch of salt. Mix well and cook for 2-3 minutes until soft. 3.Once soft, add the drained butter beans and cook for 5-10 minutes until slightly crispy around the edges. 4.At this point, add the yoghurt, harissa paste and lime juice. Mix through and cook for another 5 minutes until everything has warmed through. 5. Once ready to serve, toast the bread. 6.Once toasted, spoon the harissa butter beans on top of the toast and add your favourite toppings; we love to serve this with a pinch of chilli flakes, a crack of black pepper and a sprinkle of fresh parsley.
