FRUIT SCONE RECIPE! ❤️
What goes first.. The jam or the cream?!?! Let me know in the comments ⬇️
Using my @shopsasstainable Reusable Baking Mat! 💕
INGREDIENTS:
(For the scones)
🍓350g self-raising flour (+ a little extra)
🍓2 tbsp caster sugar
🍓1 tsp baking powder
🍓1⁄4 tsp salt
🍓100g Plant-Based Butter
🍓140ml oat milk (+ a little extra)
🍓100g mixed dried fruit
(For the Glaze and topping)
🍓50ml Oat Milk
🍓1 tbsp Maple Syrup
🍓Jam
🍓Vegan Cream or Oatly Crème fraîche
METHOD:
1️⃣Mix together the flour, sugar, baking powder and salt. Add in the plant-based butter and rub together using your hands until it resembles bread crumbs.
2️⃣Stir in the dried fruit and then add in the oat milk gradually. Use your hands to knead into a dough.
3️⃣Transfer to a floured surface and roll out until it is 1cm thick. Use a cookie cutter to cut out 15 mini scones.
4️⃣Transfer to a lined baking tray (use a @shopsasstainable baking mat 😉) and top with the glaze.
5️⃣Bake at 220°c / 200°C fan for 8-10 minutes until golden brown.
6️⃣Serve with jam and a vegan cream alternative and enjoy!
