I decided to name this drink “Bitter Root” as a tribute to my farming roots and the star ingredient, beetroot.
Growing up, I witnessed my grandfather’s dedication to farming, instilling in me a deep respect for the process behind each ingredient and embracing a zero-waste mentality from the very beginning of my career.
My journey to select the perfect beetroot led me to the Green Door Market in Bluebell, where I met Pat, a passionate advocate for organic and local produce, that has spent all his life dedicating to selling these organic beauties . With his guidance, between a great selection of organic products,I chose beetroot sourced directly from Coolnagrower in Co. Offaly, at the heart of Ireland.
As second ingredient, to elevate the flavor profile of “Bitter Root,” we chose another local gem found at the Green Door Market – horseradish. This fiery root adds a bold spiciness that complements the earthy sweetness of the beetroot, creating a harmonious balance.
And to sweeten the deal, I’ve decided to use honey instead of sugar. I’ve sourced Mileeven Pure Honey with the help of the Head chef Paul Lee in Pen&Player, another organic product that the land has to offer, established in 1988, based in Co.Kilkenny and one of the leading honey company today in Ireland, adding not only sweetness but also body and complexity.
I must also extend my gratitude to the great Connor Howlett @thebittergardener from @stillgardendistillery With his generosity, I obtained some beautiful lemon balm, a member of the mint family renowned for its delightful herbal and citrus notes.
As floreal touch I’m also using some elderflower tonic to make the drink even more refreshing and pleasant.
