How to make Tofu taste good - Smokey spiced tofu serves 2 ingredients: For the tofu: -1 x 280g block tofu -1 tablespoon olive oil -Juice of 1 lime -1 teaspoon maple syrup -1 teaspoon ground cumin -1⁄2 teaspoon fine sea salt -1 teaspoons smoked paprika -1 teaspoon cayenne pepper -1⁄2 teaspoon cocoa powder -1 teaspoon cornflour For the salad : -2 heads baby gem lettuce -2 handfuls cherry tomatoes, cut in half -1 ripe avocado -Juice of 1 lime -Small handful fresh coriander -Flaky sea salt -Red chili flakes Method: 1.Using clean hands, tear the tofu into bite-sized pieces. On a clean surface, sandwich the tofu between 2 sheets of kitchen roll. Press down to release as much water as possible. Repeat the process again with more clean, dry kitchen roll. 2.Place the olive oil, lime juice, maple syrup, ground cumin, sea salt, paprika, cayenne pepper, cocoa powder, cornflour and 1 tbsp water into a medium bowl. Whisk to combine then add the crumbled tofu and toss to coat. 3.Heat a drizzle of olive oil in a frying pan over medium-high heat. Add the tofu and marinade and cook for 5-6 minutes on each side, stirring as little as possible to allow it to turn caramelised and sticky. Remove from the heat and allow to cool slightly. 4.Serve in bowls with lettuce, tomatoes, avocado, fresh coriander with a squeeze of fresh lime juice, sprinkle of flaky sea salt and red chili flakes.
