6 things you may not know about EVOO:
🧠Brain-Friendly Fats. EVOO provides mostly monounsaturated fats, the type recommended for a brain protective diet.
💚Polyphenols. When carefully pressed, EVOO retains polyphenols from the olives, which combat inflammation in the brain.
👩🏻🍳You can cook with EVOO. While the highest quality EVOO is best for drizzling (to appreciate its flavor and keep the polyphenol count high), cook (gently) or bake with good quality EVOO under 400oF.
🥘EVOO pairings. Italians pair their EVOOs with different foods to better enhance flavors: round and floral (like in the panna cotta👉🏽), peppery and robust (the pasta).
