TRADER JOE'S CHICKEN MEATBALL ENCHILADA SKILLET✨ Quite possibly one of the tastiest and easiest recipes (ok assembling ingredients) that’s not only low calorie but high protein as well! INGREDIENTS: 2 packages of Trader Joe’s chicken meatballs 1 bottle of Trader Joe’s Red Enchilada Sauce 3⁄4 cup shredded Mexican cheese blend Trader Joe’s frozen jasmine rice packets Garnish with sour cream, cilantro and green onions Directions Preheat the oven to 350 F. Heat 1-2 tbsp of oil over medium-high heat. Then add meatballs and brown for about 5 minutes. You don’t have to brown them as they’re already cooked, but I love the flavor and texture it adds. Then pour enchilada sauce over the meatballs and toss to coat. Remove oven proof skillet from the heat and sprinkle cheese over top of the meatballs. Place the skillet in the oven to bake for 10 minutes, or until the cheese is melted and bubbly.
