BITTER ROOT - Behind the Scenes
KETEL One vodka is infused with freshly chopped purple beetroot and cooked in sous vide for 2 hours at 55°C to extract maximum flavor and vibrant color. After the infusion process, the vodka is strained to remove any solids, leaving behind a beautifully infused base with strong earthy notes.
The cordial is crafted from the purple beetroot used to infuse the vodka, ensuring no part of the ingredient goes to waste. To add a hint of spiciness, horseradish is incorporated, lending a subtle kick to the drink. Horseradish leaves are also introduced to enhance the bitterness and sharpness, complementing the earthy notes of the beetroot. Mileeven Pure Honey is then added as a sustainable sweetener, offering a delicate sweetness and complexity to the cordial.
Fresh lemon balm leaves are infused in warm water to create a fragrant tea with bright citrusy notes. To balance the sweetness, sugar is added along with a touch of citric and malic acid for acidity.
To prepare the drink, the infused KETEL One vodka is combined following the recipe with the homemade beetroot and horseradish cordial, adding depth and richness to the base spirit. The lemon balm cordial is then delicately layered over the vodka mixture, infusing the cocktail with refreshing citrus flavors. In order to get that clear pure purple/pink color and add complexity the cocktail gets clarified using milk washing.
Finally, the drink is topped with elderflower tonic, adding a floral and aromatic finish to the cocktail.

For this representation of a fake ice cream I’ve made a tasty beetroot leather,using icing sugar and agar agar, the puree is cooked down to reduce the water in eccess and then outspread on a tray and placed in dehydrator for 1 day. Once ready, rolled in a cone shape
The filling is goat cheese blended with a small amount of cream and some salt
The rock sugar candies are made using a blend of 3parts Campari and 1 part of beetroot syrup and placed again in dehydrated until only sugar is remained.
