My friends!! I get sick of cooking, SHOCKER! 😂 I genuinely love to cook. The kitchen is my happy place. But, I’m human. I work, I take care of my kids, & some days it’s daunting to think about what’s for dinner! I made these skillet enchiladas with leftovers & stuff from my pantry. Super easy! ⬇️ I sautéed some onions & store bought minced garlic. I used my leftover grilled chicken. Can of black beans, can of diced tomatoes, store bought enchilada sauce, some frozen fire roasted corn, shredded cheese, & some tortillas! Layered that up in a skillet then baked at 400 till the cheese was melted.
