Talk about sneaking in those veggies! ๐Ÿ‘€ Choc Chip Banana & Zucchini Muffins making your 5 a day even more delicious... Youโ€™ll need ๐Ÿ‘‡๐Ÿผ 2 zucchinis, grated (2 cups) 1โ„2 tsp salt 3 bananas (1 cup) 2 eggs 1/4 cup coconut oil, melted 1/3 cup maple syrup 1 tsp vanilla extract 1 2/3 cups wholemeal self raising flour 1 tsp baking soda 1โ„2 tsp cinnamon, optional 1 cup dark chocolate chips Sprinkle salt over the grated zucchini and cover with paper towel. Press the excess moisture out. The drained zucchini should yield 1 cup. Mash the bananas in a large bowl. Add the eggs, coconut oil, maple syrup and vanilla. Sift in the flour, baking soda and cinnamon. Mix until just combined and then fold in the grated zucchini and chocolate chips. Transfer batter into 12 muffin moulds. Bake for 20-25 minutes at 180 degrees Celsius. Allow to cool and store in the fridge or freezer. Make sure you tag us in your creations! ๐Ÿงก
