let me put you onto the best avocado toast you will ever eat... (i know i’ve shared it before, but i promise it’s really that good) 🥑 swipe for recipe... -Creamy avo 1 ripe avocado Zest and juice of 1 lime Handful of mint Handful of basil Good drizzle of olive oil Chilli flakes Sea salt, to taste 2 pieces sourdough (+ extra olive oil, salt and chilli flakes) 100g grape tomatoes 50g bocconcini, torn or good-quality soft fetta Preheat oven to 200C. Place sourdough and tomatoes on a tray lined with baking paper and drizzle generously with olive oil (both sides of the bread) and sprinkle with sea salt and chilli flakes. Bake for 10 mins (or until bread is golden and tomatoes have collapsed), flipping the sourdough over halfway. Save any leftover oil from the tomatoes. Blend all ingredients for the creamy avo in a food processor until smooth. Spread over sourdough and top with tomatoes, bocconcini or fetta and leftover cooking oil or an extra drizzle of olive oil.
