This week we’re making pan con tomate! It’s a classic Spanish tapa made with toasted bread, garlic, fresh tomato, olive oil, and salt, super simple but so good! Here’s how I like to make mine: Ingredients ✨Sourdough bread, sliced ✨Olive oil (for frying + drizzling) ✨1 garlic clove, peeled ✨1 extra large ripe tomatoes ✨flaky salt, to taste TOPPINGS: ✨castelvetrano olives ✨Capers ✨Parmigiano Reggiano (or Manchego to keep it traditional) ✨evoo + flaky salt for finishing Instructions 1. Pan-fry slices of sourdough in olive oil until golden and crispy on both sides. 2. While the bread is still warm, rub it with a peeled garlic clove. 3. Grate your tomatoes until all that’s left is the skin, then press the mixture through a fine-mesh strainer to remove excess liquid. You want it thick, not watery. 4. Season the tomato pulp with sea salt and a drizzle of extra-virgin olive oil. 5. Spoon the tomato mixture generously over your garlicky toast. 6.
