When I decided to start @nanoom_dining it was very important to me that I plate things traditionally.
In all the years I've been in the hospitality industry, I always shied away from this style. I thought Corean food looked too simple. I didn’t truly appreciate beauty in its elegant and simplistic form. 반찬 (banchan) offers so much colors and textures visually. As much as I appreciate the western style of plating, I wanted my food to look like the way my parents remembered. Western style often focuses on individual plating but with Corean food, it really is all about sharing.
I wish I started this sooner.
I hope to have more cultural conversations and share with all of you.
