i know many of you aren’t ready for fall but can i temp you with a pre fall crispy chicken cutlet + maple mustard aioli + fennel apple salad ??
here’s a recipe-ish
start by breading your chicken: seasoned flour (salt, pepper, cumin, paprika), then beaten egg, and lastly seasoned panko bread crumbs (salt, pepper). after coating each chicken cutlet put them in the fridge for about 20 minutes so the breading really adheres to the chicken
while the chicken is in the fridge make the aioli & salad
aioli: 2 tbsp kewpie mayo, ~ 1.5 tsp maple syrup, 3 tsp whole grain mustard, 1/2 clove of garlic grated and as much black pepper as you like (i did a good bit)
salad: 1/2 an apple thinly sliced, 1 small bulb of fennel thinnly sliced, fennel fronds all dressed with olive oil, 1/2 lemon juice, 1/2 clove of garlic grated, salt, pepper, cumin (ideally whisked together separately then added to salad)
heat neutral oil in a frying pan. once heated add the chicken cutlets, being sure not to crowd the pan, and cook for 2-3 mins per side until golden brown. remove and add to a wire rack line baking sheet and season with salt immediately
plate & enjoy!
