Spinach & roasted almond pesto pasta serves 4 ingredients: -400g dried pasta -A large handful of fresh basil, about 50g/1.8oz -130g roasted almonds -2 tablespoons olive oil -200ml water -1 tablespoon nutritional yeast -2 garlic cloves, roasted -juice of 1 lemon -1 bag of spinach -pinch of sea salt -pinch of sea salt & black pepper method: 1.Make the pesto by placing the basil, roasted almonds, olive oil, water, garlic cloves, nutritional yeast, the juice of 1⁄2 lemon and a good pinch of salt into a powerful blender or food processor. Blend until the mixture comes together to form a slightly chunky pesto. 2.Cook the pasta according to the instructions on the pack. Once cooked, drain and spoon back into the pan. 3.Mix the pesto and spinach through the pasta and heat over a medium heat until everything has heated through and the spinach has wilted. 4.Serve with some pepper and a squeeze of lemon on top.
