The sauce! In my quest for the perfect #chimichurri I took a quick one-to-one lesson from my friend, chef @niallmckenna down at @waterman.house... Here’s his take: 🌿 50g fresh parsley 🧅 1 x red onion 🧄 4 x cloves garlic 🌶 1⁄2 red chilli (Scotch Bonnet) 🌱 2 x tbsp dried oregano 💧 2 tbsp water 🫒 100ml extra virgin olive oil 🍇 50ml red wine vinegar 🧂 Sea salt First up: chop everything super finely (or you can take the easy route and blitz the parsley & garlic in a food processor, but for me that creates a herb mash consistency and I prefer a slight crunch. Plus, it’s more authentic to chop!). Once chopped, add the parsley, garlic, chilli & onion to a bowl and mix in with the dried oregano & salt, adding the red wine vinegar and water to kick start the flavour burst. The acid in the vinegar acts a bit like in a ceviche here, fusing flavours perfectly. Don’t forget to taste test about now, and add a little more of something if it needs it. Ideally this fusion should last for up to 30 minutes before serving, and in that time, you can prep your dish. Chimichurri is an Argentinian or Uruguayan salsa, which complements churrasco (grilled beef or lamb) perfectly, so it’s great for a BBQ, but veggies and vegans take note - it also works wonders on any roasted vegetables, it’s great with rustic bread or fried/grilled halloumi or - my favourite - a bowl of thrice fried chunky potato chips or wedges.
