Ok I know what we’ll be eating all fall & winter long...
And the beauty of this dinner idea is that there’s no one true recipe. Have a favorite corn bread mixture? Use it! Have a secret family chili recipe? Use it!
I used a box of @krusteaz gluten free honey cornbread mixture, added a cup of shredded Colby jack cheese & they turned out DELICIOUS. The waffle maker gave the cornbread the most amazing crust 🤤
Here’s the chili recipe I used:
• (1) LB ground turkey
• 1T cumin
• 1T paprika
• 1T minced garlic
• 2T brown sugar
• Salt & Pepper
• (1) sweet onion
• (1) can crushed tomatoes
• (1) can kidney beans
• (1) can pinto beans
• (1) can black beans
• (1) can corn
• 1/4 cup tomato paste
• 4 cups chicken broth
In a large pot, sauté the garlic & onion until soft.
Add the ground turkey & cook thoroughly.
Add seasonings, brown sugar, beans, corn, tomatoes, tomato paste and chicken broth.
Bring to a boil then reduce to low for 30 minutes.
Spray your heated waffle maker with cooking oil.
All waffle makers are different, but mine created the best waffles when cooking for 5 minutes.
Let your cooked waffles cool down on a plate for 3-5 minutes (this is where all the crispness comes from!)
Then strain a cup of cooked chili (so there’s no excess juice) and top your cornbread waffle. Then finish it off with more shredded cheese, sour cream & chives!
