A very good way to eat a head of cauliflower: slice into flat, irregularly sized pieces, dunk the pieces in ricotta (mixed with egg, lemon, oregano, and lots of black pepper), then dredge with panko. Oven “fry” them on a hot, oiled sheet pan (using @rebeccafirkser’s very smart technique from her Shockingly Crisp Baked Latkes on @food52), and serve with marinara on the side. My daughter and I polished off nearly the whole pan standing at the kitchen counter. ☺️
