Fermented foods like sauerkraut, kimchi, miso and probiotic yoghurt can be beneficial at boosting bacteria - and taste delicious too. Here's how to make it:Ingredients:🥒1 cucumber🌾100g dry buckwheat 🥑1/2 avocado 🥬1 handful baby spinach🥣 2 tbsp sauerkraut 🥄2 tbsp chickpeas🥒4 pickles🌿70 g beetroot🍲2 tbsp kidney beansFor the dressing: 🥜1 cup of raw cashews🫒1 tbsp olive oil 🍋Juice of 1 lemon🧂Salt and pepper to taste Method: Soak cashews in water and set aside for the dressing. Peel slices of cucumber and roll them up and slice the avocado. Cook the buckwheat for 15 minutes in boiling water. Drain and then add to a bowl with the spinach, sauerkraut, sliced pickles and the rest of the ingredients. Blend together the cashews, olive oil, lemon juice, salt and pepper.
