Be Messy + Coco Chili Chocolate Chip Cookies Recipe: Adapted from an olive oil cookie recipe feat. In Life is What You Bake It by Valery Lomas * 1 1/2 cups GF flour or all-purpose flour * 1/2 teaspoon baking powder * 1/2 teaspoon baking soda * 1/2 teaspoon sea salt * 1/3 cup coconut oil * 3 tablespoons plant based butter, room temperature * 1 cup organic cane, maple, or date sugar * 1 large egg, room temperature * 1 tbs vanilla extract * Dark chocolate chips or chopped bar * Handful of shredded coconut * Flaky sea salt (optional) * 2 generous pinches of chili (or 1/2 tsp) INSTRUCTIONS * Preheat the oven to 350°F. * In a large bowl, whisk the flour, baking powder, baking soda, chili, and salt together. Set aside. * Combine the olive oil, butter, and sugar in the bowl, then gently mix in the egg and vanilla extract * Fold in chocolate and coconut. * Form cookies in to balls and bake 15-18 minutes. Let cool before diving in or turning into a tropical ice cream sandwich I suggest mango/passionfruit sorbet as a pairing).
