Run the knife along the inside leg, pop the joint, and cut to release. Repeat on the other side. 3. Separate the thigh from the drum by slicing along the joint where they meet. 4. Optionally ~ I like to debone and slice the thigh meat so that everyone can taste it. To do so, carefully remove the bone by cutting straight along it from the back, then pull it out and slice. 5. Onto the breasts. The easiest way to carve is to remove them from the carcass and then slice. To remove, run the knife slightly off-center along the bone, staying as close as possible to the bones, then make another cut along the bottom to release it. Slice into even pieces. 6. To remove the wings, lift it up and cut around it, then release by the joint. Separate the drummet from the wing by slicing by the joint again. 7. For plating, I like to keep things symmetrical on both sides of the plate so everyone can reach or separate it into two plates evenly. 8.
