Coconut Shrimp with Yuca Frita & Mojo Sauce Coconut Shrimp ✨1 lb shrimp, peeled and deveined ✨1 cup flour seasoned with garlic salt and paprika ✨Coconut oil, for frying Wet batter: ✨1 cup all-purpose flour ✨3⁄4 cup club soda ✨1⁄2 tsp salt ✨1⁄4 tsp baking soda ✨1⁄4 tsp paprika Dry Coating ✨1 cup panko crumbs ✨1 cup coconut shavings (you can use either sweet or unsweet) ✨Garlic salt, to taste ✨Paprika, to taste Instructions: Season the flour with garlic salt and paprika. In another bowl, whisk together the wet batter ingredients. In a third bowl, mix the panko and coconut flakes and season with the same spices. Dredge shrimp in the flour, dip in the batter, then coat in the coconut-panko mixture. Let it sit in the fridge for 5 to 10 minutes then Fry in hot coconut oil until golden, 2–3 minutes per side. Drain on paper towels. I like to add a couple pieces of raw carrot to the oil to keep it clean. This allows me to use the same oil for a few batches without anything burning! Yuca Frita: Boil frozen yuca in salted water for 10–15 minutes, until fork-tender. Drain, let cool slightly, Remove the rind in center then slice into thick fries. Fry in hot avocado oil until golden and crispy(about 4min per side) Sprinkle with salt and serve immediately. Mojo Sauce ✨1 small bunch cilantro ✨4–5 garlic cloves ✨1⁄4–1⁄2 cup extra virgin olive oil ✨Salt to taste Blend everything, Taste and adjust salt or oil if needed.
