The double-collar design of the chore coats worn by the servers is a Goodfight signature, inspired by the lapel-outside- of-jacket-collar styling of the fifties and symbolizing one the brand’s core motifs of “duality”, embracing both eastern & western elements of both brands’ influence. Aprons worn by the kitchen staff were designed to be reversible so they could be flipped if stained. furnished with towel straps and silicone-tipped drawcords that are typically used on jiu jitsu gi’s for extra comfort & utility. Shirts were tailored for a slimmer profile on the body to work in-tandem with the aprons, featuring 3/4 length sleeves and adjustable snaps to keep fabric out of food or flame. The combination of the chef-style mandarin collar, covered placket, and flat-front-curved-back-hem styling creates a distinct look while providing another nod towards the colliding of eastern & western elements.
Materials & Quality
Japanese fabric with performance technology was sourced for the tops and American poly-cotton twill for the apron. Shirts feature COOLMAX® broadcloth for staff working over an open flame or running back and forth between the kitchen and storage, while chore coats use a dyed cotton mixed grosgrain that is UV-cut, Quick dry, and also coolmax- type tech for comfort and any potential spillage that is inevitable in food service. The jackets of the serving staff also feature genuine mother of pearl buttons to accent the jacket’s subtle texture. The material choice also serves a functional purpose: made from natural materials, they carry more depth of color than traditional plastic resin buttons and do not dissolve after repeated washes like resin buttons can, which adds to the durability of a jacket that will require constant cleaning.
Lastly, the cream color palette for the initial run was chosen to compliment the texture & tones of the space’s interior, with a graphite colorway for the bar staff.
All items were manufactured locally, an important factor in Kato’s decision to work with Goodfight because of their desire for the project to feed back into the local economy.
