Tomato with Tofu and Lemon Verbena. Served in a ceramic Donabe pot designed by the artist Eder Perez, this dish features green, yellow and red cherry tomatoes, poached in a tomato “tea” with lemon verbena, lemon thyme, star anise, black peppercorns, and juniper berries, along with charred scallions, jalapeño, and more herbs.
