To make this dish you’ll need to combine the juice of 2 limes, juice of 1 orange, seasoning (1 1⁄2 teaspoons paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon cumin, Pinch of salt and 1⁄4 teaspoon black pepper) and 2 tablespoons of grapeseed oil to make the marinade; reserve 1/4 cup for later use. Place boneless chicken tenderloins and remaining marinade in bowl. Chill for at least 30 minutes or overnight to let it all marinate. When you’re ready, preheat large sauté pan on medium-high 2–3 minutes and cook the chicken for about 2-3 minutes or when it’s lightly browned. Remove the chicken from pan and add one sliced red pepper and half of a red onion with reserved marinade; cook and stir 2–3 minutes until vegetables begin to soften. Return the chicken to the pan and cook for another few minutes.
