First shot at this post visit from @roberta_pezzella_pezz @lievitopizzapane. I over proofed a bit, and didn’t have soft enough flour around so used some rye instead. My biga was a bit wetter than theirs, probably wasn’t the best idea. I also used a higher percentage of biga and levain, which works for flavor but maybe not for structure. Anyway, still so stoked to get to see their process!!
