Replying to @.anahit definitely should try making this as a side dish for the holidays INGREDIENTS: • 1 medium pumpkin • 1 1⁄2 cups cups basmati rice • 1⁄2 cup Dried apricot • 1⁄2 cup Walnuts • 1⁄2 cup Slivered almonds • 4 dates • 1⁄4 cup golden raisins • 1⁄2 cup butter • 1⁄2 cup Honey • 1 1⁄2 tbsp cinnamon • 1⁄4 tsp all spice • 1⁄4 tsp nutmeg • 1⁄2 tsp Ginger • 1⁄4 tsp cumin • Brush outside of pumpkin with vegetable oil DIRECTIONS: 1) Parboil basmati rice for 8 minutes then strain and set aside. Cut open a hole at the top of the pumpkin and scoop out all the filling and seeds. 2) Chop your dried fruit and walnuts. Toast them in a pan with 1⁄2 tbsp butter, then set aside. 3) In a bowl mix the rice, seasoning blend, honey and melted butter mixture, and the nuts and fried all together. Then stuff the pumpkin with the mixture. Leave a bit of space at the top so steam can escape, you don’t want it stuffed to the brim. 4) Bake at 350 for 45 minutes (larger pumpkins needs about an hour an 40 minutes to cook).
