Replying to @manu.yavorsky this combo is 200 IQ INGREDIENTS: 2 lb flank steak 4-5 sweet peppers 1 white onion 2 cups masarepa (pre-cooked corn flour) 1 cup dried black beans 3 cups of water for the beans 1 head of garlic 1 cup oaxaca cheese (if you can find venezuela queso use that instead) 1 diced tomato 2 tbsp oil 1⁄4 bunch cilantro 1 tsp black pepper 1 tsp cumin 1⁄2 tsp salt 1 tsp sazon w annato (the red one) 2-3 yellow plantains these are the sweet ones DIRECTIONS: • Soak black beans overnight, strain and rinse, then add in a pot with 3 cups of water and let simmer 1 1⁄2 -2 hours until tender. Cut flank steak into 4-5 pieces and boil for 45 minutes with 5 garlic cloves, 1⁄2 an onion, and 1 tbsp of adobo. Strain and let the meat cool down then shred into small pieces. Reserve 1⁄2 cup of the beef stock Place the beans in a new pot with oil, sweet peppers, onion, and garlic. Season with black pepper, cumin, salt, and sazon and let simmer on low for 30 minutes. Add cilantro at the end. • In a new pan add oil, pepper, onions, garlic, and the shredded meat. Stir until some of the meat has a bit of a sear. Then add tomato paste, some of the beef stock used to boil the meat, and season with the same seasonings used for the beans. Let it cook down until broth thickens up. • Add 1 cup of masarepa for every 3⁄4 of water. 1 cup will yield 3 arepas. Mix until well combined. Roll into balls then flatten into pancakes but not too thin. Pan sear until theyre brown on the outside and get a crisp to them. Then bake at 450 for 5-10 minutes so they puff up and the dough cooks through. • Peel sweet plantains and cut diagonally. Add to a pan with oil and fry until golden brown and carmelized. About a few minutes on each side. The darker they turn the sweeter they’ll be. Shred cheese for a topping.
