Lots of questions about this method of putting up ducks. Yes the head is left on for identification, I travel with meat often this keeps me legal throughout the year. Legs thighs and breast meat remain attached to the head via the skin. Side note avian influenza is real and states would prefer you not travel with birds right now. Also yes this method freezes well, less air space than leaving a wing attached and I’ve never had any off tastes due to it. When deboning I’ve been removing the wing bones entirely they tend to be the ones that poke through the vac seal bags wasting your time and leading to freezer burn. All carcasses, bones go in the stock pot, which may also include hearts, livers, and gizzards.
