Make Monday Magical with these Chocolate Cheesecake Bars CHOCOLATE š« (vegan + gluten-free)
This recipe is super decadent tasting, but low in sugar and sweetened with dates and a little maple syrup. No baking required and simple to make! Thank you @livingwellwithnic for sharing this recipe with us.
INGREDIENTS:
Crust:
1 cup packed dates (pitted)
1.5 cups rolled oats
3 tbs @navitasorganics cacao powder
Filling:
1.5 cups @navitasorganics raw cashews
1-2 tbs lemon juice
3 - 4 tbs water (to help blend)
1-14oz can of full-fat coconut milk
1 cup @navitasorganics cacao wafers (melted)
1/4 cup maple syrup
INSTRUCTIONS:
Crust:
1. Add dates, oats, and cacao powder to a food processor and blend until a loose dough forms.
2. Line a 9x9 baking pan with parchment paper and press the crust into the pan.
3. Set aside while you make the filling.
Filling:
1. Add all filling ingredients to a blender and blend until very smooth.
2. Pour the filling on top of the crust. Tap the pan a few times to release any air bubbles.
3. Place in the freezer for about an hour to set.
4. Top with melted chocolate, slice and enjoy!
