Mhhh Monday 👩‍🍳 What better way to start the week then with cake? 🥧 @loveandmelons has got you covered with her delicious lemon thyme cake recipe 🍋 Ingredients: 3 lemons 1⁄2 bunch lemon thyme 190g soft butter 240g raw cane sugar 3 eggs 190g flour 1 tsp baking powder 1 pinch of salt 80g white chocolate 1-2 tbsp sour cream 1 tsp sugar beet syrup 50ml water Wash lemons, grate zest, squeeze one lemon and set aside. Wash lemon thyme, pat dry, keep two to three stems, then pluck off the leaves (chop a little if needed). In a mixing bowl, combine butter, lemon zest from about two lemons, 2 tablespoons lemon thyme and 190g sugar with a hand mixer. Gradually stir in the eggs. Sift flour and baking powder into an extra bowl, then mix into the batter in two to three portions. Chop the chocolate into small pieces and mix in carefully. Finally, fold in the sour cream. Grease a loaf pan (approx. 20cm) and dust with flour. Pour in the dough and bake in the preheated oven at 170°C top and bottom heat for about 50-60 minutes until golden brown. If the cake gets too dark, simply cover with aluminum foil or baking paper. Meanwhile, boil the remaining sugar, sugar beet syrup, 1 tablespoon lemon thyme, and the remaining lemon zest and juice of one lemon with 50ml water. Once the liquid is reduced by half, quickly pour onto the finished cake. Put a few sprigs of lemon thyme on top and enjoy 😍
