this high protein, vegan, cookie dough fudge only takes 5 mins to throw together & you’ll have little decadent bites of heaven throughout the week when you need a little somethin’ somethin’ 🫶 •1 cup cashew butter (can sub any nut or seed butter but cashew gives the most cookie dough vibe!) •1 scoop vanilla protein powder (or your fave!! Use one that you like the flavor of - can omit) •1/3 cup maple syrup •1/3 cup coconut oil •1 tsp vanilla extract + pinch of sea salt •handful of chocolate chips (we measure these with our hearts) Add the nut butter, maple, & oil to a heat sage bowl & microwave for 20 second increments, stirring between each, until melty & combined. If your nut butter is super creamy & your oil is liquid already, you can skip this, I just find it easier to mix together when it’s warm. Add the remaining ingredients, then stir in the chocolate chips (if you don’t want them to melt, let the mixture cool for a bit before adding them in. Pour into a lined loaf pan. Top with a few more chocolate chips & a sprinkle of pink sea salt. Freeze for 3-4 hours, before cutting into bite sized pieces (i usually do 18-20 bite sized little pieces because they’re pretty rich & that hits the spot but you can make larger bars too).
