Full recipe below and on our blog! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients For the pasta: *1 pound pasta of your choice *1/4 cup pasta water *1 tablespoon olive oil *16 ounces mushrooms, thinly sliced *1 teaspoon truffle oil *Salt and pepper to taste ⠀⠀⠀⠀⠀⠀⠀⠀⠀ For the cashew cream sauce: *1/2 cup soaked cashews *1/4 cup nutritional yeast *3/4 cup Califia Farms Extra Creamy Oatmilk *1 tablespoon truffle oil *Lemon juice, to taste *Salt and pepper to taste ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Method *Boil water and cook pasta according to the package instructions. While the pasta is boiling, heat a skillet with olive oil and add in mushrooms with salt, pepper and truffle oil. Saute until golden brown *To a blender, add soaked cashews, nutritional yeast, Califia Farms Extra Creamy Oatmilk, truffle oil, lemon juice and salt and pepper. Blend until smooth *When the pasta is done cooking, transfer to the skillet with mushrooms and adjust with salt, pepper, lemon juice and about 1/4 cup pasta water. Then, add in cashew cream sauce, mix until combined, and serve. Enjoy!
