Do you prefer a soft cookie or a crunchy cookie? I made these lattice top cookies with the Pumpkin Spice Cookie recipe and Buttercream Frosting recipe from my book Cookie Canvas. To make the caramel filling, I combined 36 soft caramel candies with 1/4 cup plus 2 tablespoons of heavy cream and a pinch of salt. I stirred that over medium heat until the candies were melted.
