MEDITERRANEAN BAKED FISH WITH A SPINACH & CANNELINI BEAN SALAD
A healthy, quick and OH SO DELICIOUS meal!!!
I love this meal. You can prep the salad while the fish is cooking and you have a dinner on the table in 20 minutes!!
Serves 2
Ingredients:
1 tablespoon extra virgin olive oil
350-400g piece of snapper (basa, barramundi or cod also work)
1 cup cherry tomatos, halved
2 tablespoons black olives, chopped
2 tablespoons jarred red pepper strips - I use @alwaysfreshau
1⁄4 cup basil leaves, roughly chopped
1 tablespoon extra virgin olive oil
Cracked black pepper
Salad:
2 cups spinach leaves
1/2 cup canned cannellini beans, drained
1/4 cup jarred red pepper strips - I use @alwaysfreshau
1/4 Spanish onion, finely sliced
1/4 cup goats cheese, crumbled
1 tablespoon pinenuts, toasted
1 tablespoon extra virgin olive oil
1 tablespoon apple cider vinegar
1 teaspoon honey
Method:
1. Preheat oven to 200 degrees Celsius.
2. In a small bowl, mix together the cherry tomatoes, black olives, red pepper strips, basil, olive oil and pepper. Mix well.
3. Pour 1 tablespoon olive oil into a small roasting dish, lay out the fish fillet and top the fish with the cherry tomato mix. Roast in the oven for 15 minutes (or slightly longer if your fish is thicker).
4. Meanwhile, make the salad. For the dressing, mix together the olive oil, apple cider vinegar and honey. Season well. Set aside.
5. Place the spinach, cannellini beans, red pepper strips, Spanish onion, goats cheese and pinenuts into a bowl. Toss gently. Then add the dressing and toss again. Serve the roasted fish alongside the spinach salad.
