The best lunch☺️ Ingredients For the chickpea smash 1 can chickpeas, strained & rinsed 2 tbsp vegan mayo/aioli (I used @pimp.my.salad) 1/2 tsp miso 1/2 tsp mustard Juice & zest 1/2 lemon 1/4 cup herbs (I used parsley & basil, dill would be great here too) 1/2 tbsp apple cider vinegar 1/2 tsp garlic powder 1 tbsp nori, chopped Sourdough bread Tomato Lettuce Sprouts Directions# Mash the chickpeas with a fork, some texture is ok though. Add all the rest of the ingredients into a bowl and mix well to combine. To the sandwich, add the chickpea smash, sliced tomato (I like to season here with salt and pepper, then sprouts and lettuce.
