These bars are so pretty, so easy, & made with a good list of Whole Foods ingredients 🫶 they remind me of ice cream bars.. so good! Base: 1/4 cup raw cacao powder 1 cup pitted medjool dates 3/4 cup nuts/seeds of choice (i used almonds but any work) 1/4 cup unsweetened shredded coconut (or more nuts) Pinch of sea salt 2-4 tbsp water, as needed Filling: •1 cup coconut cream (solid part from canned coconut milk. Scoop it out & you can use remaining water to make 1 cup or use a can of actual coconut cream) •3/4 cup cashews (soaked in super hot water for at least 20 mins) •1/3 cup maple syrup (more if needed) •2 tbsp melted coconut oil •1 tsp mint extract + pinch of sea salt Topping: 1 1/2 cups chocolate (i used @hukitchen mint chocolate bars) •fresh mint & sea salt for garnish Note: the chocolate will crack when you’re cutting them into bars. I think it looks pretty, but if you don’t, you can add 4-6 tbsp coconut cream to the melted chocolate to make a chocolate ganache topping! That way it won’t crack :) 1Add all of the base ingredients to a food processor, processing until a sticky dough forms. You may need to add in a tbsp or two of water to help move things along. Press into the bottom of a lined 8x8 baking dish. Add the filling ingredients to a high powered blender. Blend until smooth, taste, and adjust as needed. Pour over the base. Place the pan in the freezer for an hour or two to firm up a bit. Once the filling layer is firm, melt the chocolate until smooth. Pour it over the top, tilting the pan to spread it evenly. Place back in the freezer for 2 hours before cutting into bars.
