INGREDIENTS:ā
1 block of extra firm tofu, cut into cubesā
200g pineapple chunksā
1 tablespoon of soy sauce/tamariā
1 tablespoon of sesame oilā
1 garlic clove, crushedā
1 avocadoā
380g cooked brown riceā
Mix of kale, spinach and rocket leavesā
Sesame seedsā
1/2 cucumber, slicedā
9 radishes, slicedā
ā
METHOD:ā
Preheat oven to 180c, and line a baking tray.ā
In a bowl, combine soy sauce/tamari/sesame oil and garlicā
Add the tofu chunks and coat evenly, before placing on baking tray and putting in the oven for 20 minutes.ā
Massage the mixed leaves with a drizzle of oil, and then line the lunch boxes/bowls.ā
Add the tofu and pineapple chunks, rice, avocado, cucumber and radishes.ā
Garnish with sesame seeds and enjoy!ā
