No problem! šŸ‘‡ļø #InternationalPokeDay šŸ„—šŸ„¢ā  ⁠ Prep Time: 5 minutes⁠ Cooking Time: 20 minutes⁠ Serves: 4⁠ ⁠ INGREDIENTS:⁠ 1 block of extra firm tofu, cut into cubes⁠ 200g pineapple chunks⁠ 1 tablespoon of soy sauce/tamari⁠ 1 tablespoon of sesame oil⁠ 1 garlic clove, crushed⁠ 1 avocado⁠ 380g cooked brown rice⁠ Mix of kale, spinach and rocket leaves⁠ Sesame seeds⁠ 1/2 cucumber, sliced⁠ 9 radishes, sliced⁠ ⁠ METHOD:⁠ Preheat oven to 180c, and line a baking tray.⁠ In a bowl, combine soy sauce/tamari/sesame oil and garlic⁠ Add the tofu chunks and coat evenly, before placing on baking tray and putting in the oven for 20 minutes.⁠ Massage the mixed leaves with a drizzle of oil, and then line the lunch boxes/bowls.⁠ Add the tofu and pineapple chunks, rice, avocado, cucumber and radishes.⁠ Garnish with sesame seeds and enjoy!⁠ ⁠
