CHOPPED CHICKEN SALAD 🥑 I used to think I salads were boring and then I realised I was just making it wrong the whole time 😅 this is essentially chips and dip.. what’s not to love?! Ingredients: 125g chicken breast 1 tsp peri peri seasoning 1-2 cups lettuce 1/2 cucumber 5 cherry tomatoes 1/4 red capsicum 1/4 red onion 2 tbs sweet corn 1/4 cup black beans 1/2 cup @tostitos_au tortilla chips Dressing: 1/2 avocado 1/4 cup Greek yoghurt Half a lime Fresh coriander 1/2 tsp garlic powder Salt & pepper 1. Cook chicken in a fry pan with peri peri seasoning. 2. Add dressing ingredients to a blend/food processor. Add water gradually to thin/until desired consistency. 3. Diced the vegetables and place in a large mixing bowl. Drain and rinse the beans, add them to the bowl with the cooked chicken & dressing. Toss to combine. 4.
