Roast your chickens like you mean it and come this-close to thinking it’s burnt.
🔥 425°f for 45 minutes for 3.5 lb
🔥 lots of salt and pepper
🔥 open oven door every 5-10 minutes to let out steam
🔥 use convection if you have it. Increase oven temp to 450° if you don’t (I made this in a Breville countertop oven bc my big one’s on the fritz)
🔥 rough chop potatoes and onions, light toss in olive oil. Let them char - it’s delicious. There will be steamed ones underneath for the faint of palate.
