Grilled Ribeye Steak with Cilantro Lime Dressing 1 lb USDA Black Angus Ribeye Steak Salt and pepper to taste 2 mini cucumbers, sliced 1 cup cherry tomatoes, halved Mixed greens 8oz Traditional Feta Cheese, cubed For the cilantro lime dressing 1/2 cup cilantro 3 tbsp olive oil 2 garlic cloves 1 tsp lime zest Juice of 1 lime 1 tbsp soy sauce Salt and pepper to taste Season the ribeye with salt, and allow it to sit at room temperature while you prep all the other ingredients. Cut the mini cucumbers into thin slices, and slice the cherry tomatoes in half, and set aside. Cut the feta cheese into small cubes and set aside. To make the dressing, combine the cilantro, olive oil, garlic cloves, lime zest, lime juice, soy sauce, and salt and pepper in a blender, and blend until smooth. Store in an airtight container in the fridge. Preheat the grill over a high flame, and grill the ribeye for about 5-7 minutes on one side. Flip the steak, and cook for another 5-7 minutes on the other side, until the steak reaches about 130 degrees internally. Remove from the grill, and allow the steak to rest under aluminum foil for 10 minutes before slicing. To serve, arrange the greens in a salad bowl, top with the cucumbers, tomato, feta and dressing, and toss to combine. Add the steak on top, and season with some additional salt and pepper.
