🌿Salad of the day🌿 Fig, blueberry and radicchio salad Serves 4 Ingredients: 2-3 radicchio (or red endives) 125gr blueberries 4-5 figs 125gr feta cheese 4 sprigs of fresh basil 4 sprigs of fresh mint Olive oil Balsamic vinegar or Pommée Fleur de sel and pepper Optional: toasted slivered almonds Method : Wash, dry and chop the radicchio and place them in a container. Chop the herbs and add them to the radicchio. Add the feta cheese in crumbs. In a small bowl, mix 2 tablespoons of balsmaic vinegar and 3 tablespoons of olive oil. Add salt and pepper to taste and adjust if necessary. Pour half of this mixture into the container and toss the radicchio, herbs and feta cheese to coat well with the dressing. Place this mixture on a serving dish. Sprinkle with blueberries. Cut the figs in half lengthwise and place them on the dish. If you wish, you can add slivered almonds toasted without any added grease in a pan beforehand. Pour the remaining dressing over the salad and serve!🌿 Photo by @christophe_roue
