Replying to @fikay000 I want to make this all the time now 😍 INGREDIENTS: β€’ 2 lb beef or goat meat β€’ 2 red bell peppers β€’ 8 oz diced tomatoes β€’ 2 onion β€’ 3 scotch Bonnet peppers β€’ 2 garlic clove β€’ 1 1⁄2 15 oz cans tomato sauce β€’ 4 tbsp Tomato paste β€’ 1 tsp salt β€’ 1 cup veg oil or as needed (I used a 1⁄2 cup) β€’ 1 tbsp curry powder β€’ 1 tsp black pepper β€’ 1⁄2 tsp nutmeg β€’ 1 tsp complete seasoning β€’ 1 sprig of thyme β€’ 1⁄2 tsp dried or ground thyme β€’ 2 bay leaves β€’ 2 ripe plantains DIRECTIONS: 1) Add beef in a pot with sprigs of thyme, 1 tbsp curry powder, 1⁄2 onion sliced, 1⁄2 tsp nutmeg, 1 tsp black pepper, two bayleafs, 1 tsp complete seasoning, and 1⁄2 tsp salt. Cover with lid and let the meat sweat out its juices for 5 minutes. 2) Blend a pepper mixture with one 1⁄2 can diced tomatoes, bell pepper, ginger, scotch bonnet peppers, and one half can tomato sauce. Then add to a pot with 1 more can of tomato sauce. Let it cook on low simmer for 25 minutes. 3) Check on the beef, add water till it’s level with beef. Let it cook for 25 minutes until tender. 4) In a new pan add 1⁄2 -1 cup oil and fry the beef in the oil until the meat is browned then set aside the beef. Add in 1 sliced onion, dried thyme, and curry powder. Saute for 1 minute. Add in 1/2 small can tomato paste and let cook for 3 minutes. Add in the tomato mixture and cook on a medium heat for 25 minutes. 5) Strain the beef stock and add in to the stew. Add in a beef bouillon cube and add back in the beef. Let the stew cook down for 5 more minutes and then it’s ready to serve over white rice with a side of sweet fried plantains. #nigerianfood #nigeria #cooking #cookingtiktok #recipes #africanfood
