Earlier this month, our culinary director @barneyfleetwood traveled to South Australia for @quandongfestival, a celebration of sustainable living, farming, and bush foods in the Flinders Ranges. At The Hilltop to Tabletop dinner, Barney, his brother Doogal of @flindersfoodco, @_made_by_jess of @yerrabingin, and Michael Brine of @a_touch_of_salt highlighted native Australian ingredients in a five-course degustation menu.
