#CampbellsPartner Cheesy baked rice was one of the first side dishes that I fell in love with when I came to the U.S. as a little girl. So when @Campbell’s Soup challenged me to create a Tex-Mex inspired holiday side dish I knew that I wanted to use this as my base, and queso fundido is one of those items that l'm always going to order at a Mexican restaurant! #SidesSeason Queso fundido cheesy baked rice: ✨1 1/2 cups cooked rice ✨12 oz chorizo ✨1 Tablespoon butter ✨1 large yellow onion ✨1 can of @Campbell's® Condensed Cream of Mushroom Soup ✨1 cup of Oaxaca cheese ✨1 cup Monterrey jack cheese ✨splash of milk (optional if it's too thick) 1. Cook the chorizo in a large skillet over medium heat until fully browned. Remove the chorizo from the pan and set aside. 2.In the same pan, add butter, then add the onions. Cook until the onions are translucent, about 3-4 minutes. 3. Stir in the Campbell's® Condensed Cream of Mushroom Soup, half of the oxaca cheese, and the Colby Jack cheese. Add the cheese a little at a time And Continue stirring until it is fully melted and the mixture is smooth. 4.In a baking dish, combine cooked rice with 1 egg, then layer with the cheese sauce. 5. Cover the dish with aluminum foil and bake at 350°F for 20 minutes. 6. Remove the foil, sprinkle the remaining Oxaca cheese and Cooke chorizo then bake for an additional 5-10 minutes, or until the cheese is melted and bubbly 7. Removed from the oven and enjoy! #SidesSeason
