I recently returned to @chezbacchus_longbeach located in the East Village area of Downtown Long Beach. They’re a chef-driven restaurant with a focus on local and seasonal ingredients. Featured here is the Diver Scallop, here are the details:⁣ ⁣ Diver Scallop⁣ This scallop is seared, basted in butter, and rested on a bed of garnet yams and braised leek. It is then topped with a fried leek garnish and finished with a marbling of lemon beurre blanc and leek-infused oil table side. The end result is a delicate and sweet scallop that is accompanied by a bright and herbaceous finish.
